What is Matcha
Matcha is made by grinding Tencha — tea leaves that are grown in the shade and carefully dried without being rolled — into a fine powder using a traditional stone mill.
The Tencha leaves used as matcha’s raw material are cultivated under covers for about 3-4 weeks before harvest, blocking sunlight in a process called shade cultivation. This shading suppresses the conversion of the amino acid theanine into catechins, allowing the leaves to develop a rich natural sweetness and umami flavor.
